This is a recipe I’ve been making for years. It is super simple and my kids all like the sausage and broccoli. This is a dish that is easy to improvise with what you have on hand. I use all types of onions and potatoes in the dish and sometimes I use fresh tomatoes and others times I add in canned and sometimes I don’t do tomatoes at all. This is easy to customize!
Sausage Pan Fry
One pack of chicken sausage (or your favorite type)
2 medium red potatoes (or whatever type you like – I sometimes use sweet)
Two heads of broccoli
Two medium tomatoes
1 small can tomato sauce
1/2 cup green onion (or onion of your choice)
1 T olive oil
1 T parsley
2-3 cloves garlic
1/2 t Italian seasoning
Salt and pepper to taste
Bring pot of water to boil. Peel potatoes and slice. Add potatoes to pan once water comes to a boil. Wash and cut broccoli. After potatoes have cooked for a minute add in with potatoes to cook. Once broccoli is cooked but still has a bit of crunch remove from water. Remove potatoes once tender. In a large fry pan heat olive oil. Remove casing from sausage and slice. Fry sausage in pan with garlic. If you are using yellow or red onion add this at this time. Green onions you can wait to add until just before serving. Once sausage has a sear on each side add potatoes and broccoli. Then add tomatoes and tomato sauce and seasonings.
